coffee jelly

I have to admit, i'm a bit stuck on a couple of blogs at the moment. I have my favourites, then a few more that i pass by when i need more inspiration. Then i just browse page after page of Tastespotting (which is where i see many of my favourite bloggers posts!) and i recite exciting and yummy ideas pass my husband who so really doesn't care but amuses me by smiling and nodding and the occasional "ooh, nice" or "oh that sounds good!" while he watches tv, honestly as long as it tastes and looks good he will eat it =)

If you love coffee and you love jelly, this is the treat for you! The Food Librarian is one of my favourite food blogs, i especially loved her 30 days of Bundt Cakes and she sure knows how to make cool jelly! I have already tried her Easter Jello with great success, well almost! It sure looked awesome and tasted great! Now for the Coffee Jello which had me at hello!


The recipe straight from The Food Librarian

1/2 c cold water
2 cups strong coffee, hot.
1 can (14 oz) sweetened condensed milk (not evaporated milk)
3 packages of Knox unflavored gelatin

1. Place 1/2 c cold water in a bowl.
2. Sprinkle 3 unflavored gelatin packets over the water. Let sit until the gelatin blooms, about 10 minutes.
3. Stir in the hot coffee and mix until the gelatin is completely dissolved.
4. Stir in the can of sweetened condensed milk.
5. Pour into glass pan. Thickness of finished jello depends on the size of the pan. I used a 7 x 11 pan but a 9 x 13 pan will give you thinner pieces and an 8 x 8 pan will give you thicker pieces.

I used instant coffee, 8 tbsp, i found that worked after i saw That Winsome Girl tried it =) and i used an 8 x 6 inch dish which gave me a decent height to cut into cubes.
Turned out delicious!
